Meatless Monday: Favourite Vegetarian Dishes in Vancouver

We’re pretty spoiled by the incredible quality and selection of food in Vancouver, including tons of outstanding vegetarian options. Though we are not vegetarian by any means, that isn’t to say we don’t love our greens. Lately, we’ve been making the rounds to revisit some of our tried-and-true veggie dishes, and love them so wholeheartedly that we had to share them with you. (Carnivores: trust us, these are so tasty, you won’t even miss meat.)

Campagnolo: Crispy Ceci – We know them as crackpeas. Chickpeas, chilies, mint, citrus. (Recipe hack)

Coast: Crispy Brussel Sprouts – Parmesan, lemon, capers, chillies. Recreate them using Coast’s official recipe.

East is East: Ghandara Blues Roti Roll  – One of our regular workday lunch orders. Baked eggplant sautéed with herbs, tomato, onion, garlic, and spices.
