The food and beverage scene in Vancouver is constantly evolving. This spring, there have been a lot of new openings, re-openings and new locations for existing favourites. We’ve been making our way through them all, but wanted to share our list with you. So, the new-new in the city:
Botanist Restaurant
This breathtaking newcomer to Fairmont Pacific Rim has flourished in the space that Oru Cuisine once occupied. The stunning decor, immaculately designed dishes, and delicate drink creations revolve around flowers, plants, and gardens. The lush 5,000 square foot space includes a main dining room, cocktail bar and lab, champagne lounge, and garden. Don’t miss the glass-walled garden with over 50 different species of plants.

Monarch Burger
We’re always up for a solid burger – and this one is all the rage as of late. Campagnolo owner and chef Robert Belcham has cooked up something simple and delicious. Noting the popularity of his “Dirty Burger” from Campagnolo Upstairs, he created Monarch Burger which is now open in The American (former Electric Owl). The whole thing is made from scratch. Head there for their daily happy hour to score a burger and a beer for $12.

Sen Pad Thai
We’ve been waiting for this one to open up and the time has come! Head to the Net Loft Building on Granville Island to eat at award-winning chef and restaurateur Angus An’s noodle stall. Stir fried noodles flavoured with spices, herbs, and protein like chicken, pork, beef, and seafood. Side dishes include Thai chicken wings and papaya salad, dessert and drink options feature pandan, taro, and coconut, Pok Pok sodas and Thai iced tea.

L’Éclair de Génie
Vancouver has an authentic éclair shop to add to our already impressive dessert scene. This Parisian gem has arrived on Robson, thanks to Pastry chef Christophe Adam. In their 1,400 sq ft space, they have a beautiful display of intricate éclairs and 24 seats available for those who want to dine in. We’re going straight for their signature no.1 caramel beurre salé (salted caramel and mascarpone cream) and no.224 citron yuzu (lemon yuzu cream and crispy meringue).

Friendly Snackbar
This little snackbar is the newest addition to Mount Pleasant. They have a variety of plant-based and gluten-free items on their menu. We heard their rice bowls are delicious! You can also enjoy baked goods, smoothies, ice cream, chocolate, and more!

Starbucks Reserve Bar
Same same… but different! Mount Pleasant’s Starbucks has re-opened as Western Canada’s first ever Reserve Bar. We have to say that the new space is impressive. An expansive bar, lots of nooks to settle into, and an undeniable woodsy, west coast feel to the decor. Note: this is their only location with affogatos and nitro-floats on the menu. Other specialities include the Double Dark Chocolate Mocha and Americano Con Crema.
